India's Liquid Gold

From the misty peaks of the Himalayas to the sun-drenched coastal groves of Kerala β€” India's extraordinary biodiversity gives rise to honeys of unparalleled variety, depth, and character.

Our Philosophy

A Nation of Nectars

India is home to over 450 species of flowering plants visited by honeybees. Each geographic region β€” its altitude, soil, rainfall, and flora β€” imprints a unique identity on the honey produced there. The great Indian subcontinent is, in essence, the world's largest honey terroir. We have spent years mapping these micro-regions to bring you honeys that are not merely sweet β€” they are narratives of place.

Contains naturally occurring Vitamin C precursors, zinc, and potassium from moringa pollen.

Neem (Azadirachta indica) β€” the sacred tree of India, revered for 4,000 years in Ayurveda as the "village pharmacy" β€” blooms prolifically across central India. The honey produced is dark, complex, and distinctly bitter β€” an acquired taste that is intensely medicinal. Not for the faint-hearted, this is a connoisseur's honey. Azadirachtin, nimbin, and gedunin compounds from neem pollen give this honey exceptional antibacterial, antifungal, and blood-purifying properties. Traditional Ayurvedic practitioners prize this above all others for therapeutic use.

Science Meets Sensory

The Colour of Quality β€” Understanding Honey Grades

Honey colour is scientifically measured on the Pfund scale (0–140mm), from water-white to dark amber. Colour is directly correlated with the floral source and mineral content β€” not with quality. Darker honeys typically have higher antioxidant content, while lighter honeys tend to be milder in flavour. Each shade tells the story of a landscape.

Where Our Honeys Fall on the Pfund Scale

Kerala Coconut β€” Pale Gold (White 35–50)

Raw Honey Science

On Crystallization β€” A Sign of Purity, Not Spoilage

Why Honey Crystallizes

Real honey crystallizes. This is a natural and desirable process caused by glucose supersaturation. When the glucose content exceeds its solubility in water, it naturally precipitates out of solution, forming crystals β€” giving the honey a thick, creamy, or grainy texture.

Honey that never crystallizes has likely been ultra-processed, micro-filtered, or adulterated. Our raw honey will crystallize over time β€” typically 3–18 months depending on the variety and storage conditions. Consider it your quality seal.

⚠ Important β€” Never Heat Above 40Β°C

To decrystallize: place the sealed jar in warm water (max 40Β°C) for 30–45 minutes, stirring occasionally. NEVER microwave or boil β€” this irreversibly destroys enzymes, antibacterial properties, and flavour molecules. The Ayurvedic tradition warns that honey heated above 40Β°C becomes 'Ama' β€” a toxic metabolite harmful to the body.

Crystallization Rates by Variety

Each honey crystallizes at a different rate depending on its fructose-to-glucose ratio, water content, and pollen load. High-glucose honeys crystallize fastest; high-fructose honeys stay liquid longer.
